FLOUR PRODUCTS IN KABARDIAN WEDDING CEREMONIES IN THE 20TH–21ST CENTURIES: FUNCTIONS AND COOKING FEATURES

Abstract:

The purpose of this study is to summarize and systematize information about flour products intended for wedding ceremonies of Kabardians in the 20th–21st centuries, determine their functions, and identify preparation features. The relevance of this study stems from the lack of scholarly materials in modern historiography containing detailed information about the flour products prepared for Kabardian wedding celebrations in the 20th and 21st centuries. The study draws on scholarly works devoted to Kabardian wedding rituals and food, as well as recipe collections of dishes and culinary products from the cuisines of Russia and neighboring countries. The study revealed that flour products were present at all important stages of the Kabardian wedding celebration, each serving a specific function. The wedding celebration began with the baking of bread and other flour products. At Kabardian weddings, flour products served a certain sacred function. Over time, a whole set of rules for preparing flour products for wedding celebrations developed, which are still observed today. It is noted that the preparation of flour products for wedding celebrations was exclusively the responsibility of women who had a happy family life. However, older women did not participate in the preparation of flour products. Thus, the selection of participants in the culinary event was based on both gender and age.
